I love my morning routine. I wake up and clean whatever messes are leftover in the kitchen or living room from the night before. Then, I settle in with a mug of tea or my superfood turmeric hot chocolate for a little bit of cuddling with my doggy on the couch. While I work on the computer, he lounges on my lap. He prevents me from leaving the couch (in his mind at least) by firmly laying his head on top of one of my legs.

I also have the very important job of being Mr. Pupper’s personal belly scratcher.

The truth is, unless breakfast is already prepped for me and ready to go in the mornings, I tend to get locked into an endless cuddle session with my dog. This is great, except I skip the most important meal of the day more often than not. Knowing this about myself, I love to batch meal prep my breakfasts and have them ready to go and eat as soon as I wake up.

Berry Cobbler Overnight Oats Close

I need to make my breakfasts as delicious as possible, and who doesn’t love dessert for breakfast?

Inspired by one of my favorite cozy fruit desserts, these berry cobbler overnight oats feel indulgent thanks to the antioxidant-loaded blackberries.

Just a bit of honey adds sweetness to the oats. The cinnamon warms up the breakfast (while providing a kick of anti-inflammatory properties!). The lemon zest cuts through the oats with a subtle zing. Meanwhile, the hemp hearts and walnuts together contribute a complete protein to the breakfast while adding a bit of crunch.

My favorite part is I can make a batch of these. Load up your little mason jars with the sweet goodness all at once then refrigerate them. Feast on dessert for breakfast all week! That is what I call a win!

Ingredients

  • ¼ cup rolled oats
  • 1 tsp honey
  • 1 pinch salt
  • ¼ tsp vanilla extract
  • 3 tbsp greek yoghurt plain and unsweetened
  • cup milk or favorite plant milk
  • ½ cup dried berries Feel free to use any kind of berry!
  • ¼ tsp lemon zest
  • ¼ tsp cinnamon
  • tsp nutmeg
  • 3 tbsp hemp hearts
  • ¼ cup walnuts
  • 2 tbsp granola
  • 1 cup fresh berries

Instructions

  • Mix all ingredients except for the hemp hearts, walnuts, and granola in one pint mason jar or other airtight container. Cover and refrigerate overnight.
  • In the morning, heat the oats if desired in a microwave on high for 1-2 minutes. Mix the hemp hearts and walnuts into your oatmeal and top with the granola and fresh berries. Enjoy!

Notes

You can batch meal prep these in advance and keep them in the refrigerator for up to a week.
Feel free to substitute any berry for this recipe. Blueberries and raspberries would be delicious!
