Slice the sweet potatoes lengthwise about ¼" thick. I used my mandoline slicer to get uniform cuts. Then cut each slice into sticks about ½" wide with a knife.
Spread the sweet potato fries onto a sheet pan covered with parchment paper or aluminum foil. Drizzle the olive oil over the fries and then add the salt, pepper, paprika, onion powder, and garlic powder. Move the fries around with your hands or tongs to get even distribution of the oil and spices on the sweet potatoes. Spread the sweet potatoes on the sheet pan into a single layer.
Roast the sweet potatoes for a total of 30 minutes, flipping them halfway through.
Dill and Feta Dip
Combine all ingredients in a food processor and blend until smooth.
