Ingredients
1canchickpeasabout 1 ½ cups
¼red onionchopped
2picklesfinely chopped, about ⅓ cup
½cupvegan mayonnaise
1 ½tbsppickle juice from the jar
½tspsaltor to taste
pepperto taste
4vegetable wraps
2handfulsfresh spinach
1tomatothinly sliced
1avocadosliced
2-4slicescheddar cheeseyou can substitute vegan cheddar cheese
Instructions
Add the chickpeas to a large bowl and mash with a fork until about ¼-⅓ of the chickpeas are crushed. Add the red onion, pickles, vegan mayonnaise, pickle juice, salt, and pepper. Stir to combine.
Lay a vegetable wrap on a cutting board or plate and layer some spinach, tomato, and cheddar cheese on a straight line in the middle of the wrap. Place about ¼ of the Chickpea Salad mixture on top then add a few avocado slices. Fold the wrap together and repeat with the remaining three wraps.
