Chickpea Salad Wrap

Ingredients

  • 1 can chickpeas about 1 ½ cups
  • ¼ red onion chopped
  • 2 pickles finely chopped, about ⅓ cup
  • ½ cup vegan mayonnaise
  • 1 ½ tbsp pickle juice from the jar
  • ½ tsp salt or to taste
  • pepper to taste
  • 4 vegetable wraps
  • 2 handfuls fresh spinach
  • 1 tomato thinly sliced
  • 1 avocado sliced
  • 2-4 slices cheddar cheese you can substitute vegan cheddar cheese

Instructions

  • Add the chickpeas to a large bowl and mash with a fork until about ¼-⅓ of the chickpeas are crushed. Add the red onion, pickles, vegan mayonnaise, pickle juice, salt, and pepper. Stir to combine.
  • Lay a vegetable wrap on a cutting board or plate and layer some spinach, tomato, and cheddar cheese on a straight line in the middle of the wrap. Place about ¼ of the Chickpea Salad mixture on top then add a few avocado slices. Fold the wrap together and repeat with the remaining three wraps.

To prep in advance, you can make the Chickpea Salad the night before and put together the wrap in the morning!
