8 Minute Peanut Sesame Soba Noodles

Ingredients

  • 4 oz soba noodles usually about ½ package

Peanut Sesame Sauce

  • cup tamari or soy sauce
  • cup creamy peanut butter
  • 1 tsp sesame oil
  • ¼ inch piece of fresh ginger about ½ tsp
  • 1 clove garlic
  • 2 sprigs fresh parsley

Toppings

  • 1 cup kale chopped and loosely packed
  • 1 green onion sliced
  • ½ carrot julienned
  • ¼ cup peanuts roughly chopped
  • 1 lime cut into wedges

Instructions

  • Make the soba noodles according to the instructions on the package.
  • While the soba noodles are cooking, combine all peanut sesame sauce ingredients except for the parsley in the food processor and blend until smooth and well-combined. Add the parsley and pulse a few more times. If you don't have a food processor, you can finely chop the parsley with a knife and whisk the sauce ingredients together in a large bowl.
  • When the soba noodles are cooked, drain and rinse them under cold water, shaking the colander to prevent them from sticking together.
  • Prep the toppings. Chop the peanuts, green onions, and kale. Julienne the carrots.
  • Combine the cooked soba noodles and the peanut sesame sauce. Serve and top with desired toppings. Squeeze lime wedge over the noodles to add a hint of acidity.

Notes

This recipe makes more sauce than you will probably need. Save the extra sauce for the next day for an even easier and faster meal!
You can meal prep an entire weeks worth of lunches by doubling or tripling the sauce recipe and just making the soba noodles the day of!
