No-Bake Raw Brownie Bites


PaleOMG! These raw brownie bites are absolutely divine. I whipped these together for a family dinner this past weekend. They were a huge hit for sure! They are an amazing little bite of heaven to curb your chocolate craving. Perfectly portion sized, and ready to eat in under 10 minutes. No baking necessary. These bites are perfect by themselves, but if you want to dress them up for guests you can serve them along side a little coconut ice cream topped with raspberries.  

What you'll need:
1 1/4 cup raw walnuts
1 1/4 cup pitted dates
1/4 cup cocoa powder 
1 tsp pure vanilla extract 
1/4 tsp of kosher salt 
1-2 tbsp water



In a large food processor, grind the walnuts and salt until they create a fine meal. Add in the dates, cocoa powder, and vanilla extract. Process again. While food processor is running, add in 1 tbsp of water at a time (or more if needed) until sticky dough forms.  Roll a heaping tablespoon full of brownie dough into your hands to form a ball. You can roll the outside in cocoa powder or shredded coconut if you prefer. Once rolled, these brownie bites are ready to serve. You can keep them in an airtight container for up to a week.
