Watermelon Avocado Salad with a Kick!


On these HOT summer days this is what I crave! Cool, refreshing, and incredibly flavorful! You can even add some crumbled feta cheese to the dish for an extra tang!

What you'll need:

 3 cups cubed watermelon
1 large avocado, cubed
1/2 red onion, thinly sliced
1/4 cup mint, chopped
1/4 cup basil, chopped
2 tbsp lime juice
1 tbsp EVOO
1 tsp kosher salt
1/2 tsp ground black pepper 
1/4 jalapeƱo, very thinly sliced with seeds removed (omit if you don't want the spice)
Optional: 2 oz. crumbled feta cheese (omit if dairy free)

Add watermelon, red onion, mint, basil, and jalapeƱos to large mixing bowl. Stir together until well combined. Next, stir in EVOO, lime juice, salt and pepper. Gently fold in avocado until evenly distributed.
