Sweet Potato Andouille Skillet

My husband loves this hearty meal because it is both filling and fresh tasting all at the same time. The turkey andouille sausage adds so much flavor to the dish!

What you'll need:

4-5 sweet potatoes, cubed
1 small onion, chopped
1 package Turkey Andouille Sausage, sliced (try Wellshire Farms' version!)
1 bag frozen brocolli
1 1/2 cups bell peppers, chopped (I use green)
1 tbsp EVOO
1 tsp garlic powder
Salt and Pepper to taste 

Begin by adding EVOO and cubed sweet potatoes to a nonstick skillet over medium high heat. Allow sweet potatoes to cook, stirring occasionally, for about 10- 15 minutes or until tender. Meanwhile, cook broccoli in microwave according to directions on bag. Add andouille, onions, bell peppers, garlic powder, salt and pepper to sweet potatoes. Cook on medium heat until onions are translucent and bell peppers are tender. Gently fold in cooked broccoli and cook for an additional 5 minutes.
