Spinach Cobb Salad


There is nothing I love more for lunch than this vibrant Cobb salad. I make enough for both myself and my one year old who loves these delicious finger foods. Whenever I have leftover grilled chicken or hardboiled eggs, I know exactly what I'll be having for lunch the next day!

1 grilled chicken breast, cubed

1/2 ripe avocado, cubed

2 hardboiled eggs, chopped (one whole egg and one egg white)

2 oz. cubed reduced fat sharp cheddar or other cheese of choice

1/2 cup grape or cherry tomatoes, halved or quartered

1-2 cups fresh baby spinach leaves

First place spinach at the bottom of your bowl. Layer chicken, avocado, tomato, eggs, and cheese as seen in the photo above. Top with a little oil and vinegar or any other healthy salad dressing of your choice!
