Wholly Guacamole

A simple Mexican staple!

What you'll need:

4 ripe avocados
1/2 cup tomatoes, diced (I like to use grape tomatoes)
1/4 cup red onion, diced
1/4 cup cilantro, diced
2 limes, juiced 
1 tsp. cumin
1 tsp. kosher salt
1/4 tsp. cayenne pepper (optional)

In a medium mixing bowl, mash avocados until creamy leaving small chunks. Mix in the tomatoes, onion, cilantro, lime juice, cumin, salt, and cayenne pepper. 

I love to serve the guacamole with plantain chips which are grain-free!
