Southwest Black Bean Salad

This is one of the easiest side dishes to prepare. Serve on top of grilled chicken, as a side dish to mahi fish tacos, or add some sliced avocado for a nice, fresh lunch.

What you'll need:

2 cans reduced sodium black beans, drained and rinsed
1 1/2 cups diced tomatoes (or 1 can no salt added diced tomatoes)
1 can no salt added whole corn kernels
1/2 cup red onion, diced
1/4 cup cilantro, diced
1 tbsp. EVOO
1 large lime, juiced (or about 2-3 tbsp lime juice)
1 1/2 tsp. kosher salt
1 tbsp honey

In a large mixing bowl, combine black beans, tomatoes, red onion, corn, and cilantro. In a small mixing bowl, whisk together EVOO, lime juice, honey, and salt. Add lime juice mixture to large mixing bowl with black beans, and stir until evenly mixed. 

Its as easy as that!
