Avocado and Lima Bean Hummus


Yes, I know. Another hummus recipe. This hummus is so incredible I just had to share it though! It is light, refreshing, and incredibly nutritious. This super fast recipe takes under 10 minutes to prepare making it the perfect last minute appetizer that is sure to impress your guests. Serve it with toasted whole wheat pita bread, fresh vegetables, or your favorite cracker.

What you'll need:

1 1/2 cups lima beans or butter beans, cooked
1 large avocado
1 tbsp lemon juice
1 tsp EVOO
1 tsp kosher salt
1 small garlic clove
1/4 cup water


First add the garlic to your food processor. Pulse until garlic is minced. Add in your lima beans and 1/4 cup water. Turn on food processor and process until smooth (approximately a minute). Next, add the avocado, lemon juice, EVOO, and salt. Once again, turn on your food processor and process until completely smooth.
